Shred the pickles, shred the green onions, and shred the peppers

Heat the cold oil in the pan, add the onion, ginger, and chili condiments, stir-fry until slightly charred, and add the shredded pickles.

Stir-fry the shredded pickles for about 5 minutes, add a little steamed fish soy sauce (to increase freshness), remove from the pan and add vinegar.
