Yellow peach cream cake roll
Overview
I used the leftover whipped cream and canned peaches from the birthday cake the day before yesterday to make cake rolls, which are also great for breakfast with fruits and drinks.

Steps
-
Add water, 10 grams of salad oil, and fine sugar to the egg yolk in the main ingredient, and beat with a manual egg beater until the color becomes lighter and the volume becomes larger. The complete emulsification of fat helps the cake to expand evenly
-
Sift in low-gluten flour and mix until smooth, set aside
-
Add a few drops of lemon juice to the egg white in the auxiliary ingredients to neutralize the alkalinity. Use an electric egg beater to beat until the fish eyes are foamy. Add 1/2 of the fine sugar in the auxiliary ingredients and continue beating
-
Whip until the texture is obvious, then add the remaining 1/2 of the fine sugar
-
After sending it to the big hook state
-
Mix evenly with the egg yolk paste three times
-
Pour into a gold plate lined with greaseproof paper and smooth the surface
-
Place in the middle rack of the preheated oven, turn the heat up and down, and bake at 140 degrees for about 15 minutes. The specific time and temperature should be increased or decreased according to different ovens and mold shapes
-
After baking, take it out. The surface will be as shown in the picture. If the color of the surface is very dark and there is a thick cake crust, it means the heat is too high and the color is over
-
Tear off the oil paper and place on a drying net to cool
-
While the cake is cooling, add the refrigerated whipped cream with caster sugar and whip until the pattern becomes obvious
-
Place the cake body on oil paper, spread a little light cream on the surface, quickly spread the chopped yellow peaches to one side, and spread a little more cream on the left side of the yellow peach pieces in the picture to form a slope, so that there will be no gaps after rolling up
-
Roll the cake body from one end with the yellow peach pieces to the other side, with the seam facing down, and place it in the refrigerator to chill for a while
-
Uncover the oil paper and cut into pieces with a sharp knife
