Steps
-
This is the material for 1: 1 70g low root flour, 3g baking powder, mix together
-
These are ingredients 2, 40g milk, 15g fresh cream, 3g vanilla pod paste, mix together
-
These are the ingredients for 3: 1 egg, 25g sugar, 3g salt
-
Separate egg whites and yolks
-
Adding two drops of lemon juice or white vinegar to the egg whites is beneficial to the acid-base balance and has a good effect on beating the egg whites
-
Add the sugar to the egg whites in three batches and beat
-
Whip the egg whites well
-
Add egg yolk and stir
-
On the other side, sift the mixture of low root flour and baking powder into the 2 mixed milk liquid
-
Stir evenly up and down, and stir in a circular motion. The flour batter will form roots. (This step is best done before beating the egg whites, so that the flour can have some fermentation time)
-
Pour the egg whites into the evenly stirred batter in three batches and stir evenly
-
Heat the pan over low heat, (I can also use a wok for the time being ^_^) Just hang your hand in the pan to feel the hot temperature. If there is smoke, it means the fire is too big. You need to cool down before operating. Put a drop of oil on the kitchen paper, not too much, and spread it evenly
-
Pour in an appropriate amount of batter (I can make three pieces with this amount)
-
If you see any air bubbles in the pancake in the picture above, use a spatula to gently flip the pancake around and it’s done
