Measure the seasonings, 2 star anise, 1 tsp pepper, 1/2 tsp cumin, 4 bay leaves, 1/2 grass fruit, 2 pieces cinnamon, 1/2 tsp star anise seeds, 3 pieces tangerine peel, 2 pieces licorice;

Use a steel wire tea box to store the granular seasonings to prevent them from floating in the pot when cooked;

Prepare 5-6 slices of ginger and 8 green onions;

Pour the pig's trotters under cold water, turn up the heat, boil until foam forms, rinse with hot water and wait until the pot is ready;

Open another pot, fill 2/3 of the pot with water, add 8 green onions, 5 slices of ginger, 2 star anise, 1 tsp of pepper, 1/2 tsp of cumin, 4 bay leaves, 1/2 grass fruit, 2 pieces of cinnamon, 1/2 tsp of star anise seeds, 3 pieces of tangerine peel, 2 slices of licorice, bring to a boil;

Add pig trotters, 4 tablespoons of light soy sauce, and 2 tablespoons of dark soy sauce, cover, and simmer for 1 hour;

Pick up the ginger slices and green onion pieces;

Because I don’t have a boning knife at home, I can only buy the pig’s feet and cook them whole in a pot. Now that they are soft, they can be cut into smaller pieces;

After dividing, put it into the pot and cook again. Slowly cook for 15 minutes. Season to taste. Add 1 tsp of refined salt. I heard from Chef Aji that adding maltose will make the surface of the pig's feet brighter and more delicious. We don't have maltose, so what should we do? So we used honey instead. I used 1/4 cup and stirred evenly. The effect is good. After everything is done, let it sit for about 30 minutes to allow the skin to fully absorb the juice. You can enjoy it when the time is up.
