Clean the small river shrimps.

Cut off the shrimp whiskers and long shrimp legs.

Add white pepper, sugar and cooking wine and marinate for 10 minutes.

Remove the water from the marinated shrimp and add flour and starch in a 1:1 ratio.

Add 2 grams of homemade salt and pepper powder

Stir evenly and coat each shrimp with some flour

Add oil to the wok, not too much oil. When the oil temperature is 60% hot, add the small river shrimps in small amounts at a time. Remove the shrimp shells when they change color. When the oil temperature in the pot rises to nearly 70%, fry again. Do not fry for too long.

The skin is crispy and the shrimp meat is soft and tender.
