Spicy fried clams
Overview
Everyone in China knows Qingdao’s special way of eating—drinking beer and eating clams. In Qingdao dialect, it means: Haha, eat beer and eat it! Let’s have a spicy stir-fried gala today.

Wash the clams and rub them with your hands. Wash them several times to make sure they are clean and free of sand.

Dice fresh chili peppers. If you don't have fresh chilies, you can use dried ones, but they won't be as beautiful.

Wash the coriander and cut into sections.

Add oil to the wok, heat the oil and add the chilies.

Add clams and stir-fry. It must be a big fire.

The clams are ripe when they open their mouths. Fresh seafood does not need any seasoning, just its original taste. Sprinkle coriander and serve.
