  1. First, put the noodles into a bowl and put it aside separately. Then mix 2 or 3 pounds of noodles with cold water. The process of adding water is not to pour all the water into the basin at once, but to slowly flow the water while using two chopsticks to stir back and forth at the water drop. The noodles will turn into small lumps of different sizes. Add water until there is no dry flour in the basin. Knead the dough with both hands firmly into a ball, cover it and let it rest. Here, chop the washed and drained leeks and put them in a stainless steel basin for later use.

  2. Cut the minced meat into minced meat and cut the ginger into 4 slices about 1 mm thick. Put 2 tablespoons of oil in the pot and heat it up. Break open an egg and put it in. Use a spatula to stir the egg into small pieces while it is cooking. Set aside. Put the minced meat into the pot and stir-fry until the minced meat turns white.   3. Let the minced meat in the hot pot cool down slightly. Pour the minced leek into the pot and stir evenly. The saltiness depends on your personal taste. It is not recommended to be too salty. A heavy mouth is bad for your health. Put the mixed stuffing into a small basin. Put water in the pot, fill it about 2/3 of the way. While waiting for the water to boil, make dumplings.

  4. Take out about one-third of the dough and place it on the board. Stretch the dough with both hands and roll it into a long cylindrical shape with a diameter of about 3 cm. Cut the dough into small sections of about 2 to 3 cm. The cross-section will be sticky, so sprinkle some dry flour after cutting so that the cut sides are covered with dry flour. Use a rolling pin to roll the dough into a round shape. Hold the dough with one hand, and put about half a spoonful of filling in the center of the dough with the other hand. Fold the dough in half and pinch the top and bottom pieces tightly with your thumb and index finger, and then pinch both sides tightly to make sure there are no holes. After wrapping each piece, place it on a curtain or flat surface sprinkled with a thin layer of flour to prevent the bottom from sticking to the board.

  5. Put the wrapped dumplings into a pot of boiling water and cook for about 6 minutes until they float, then cook for another 2 minutes.
