Guokui Twice-cooked Pork
Overview
A friend gave me a piece of pot helmet. It was so big that it weighed five kilograms. The Guokui is yellow on the outside and white on the inside. It tastes very chewy. The Guokui version of twice-cooked pork is a delicacy that is both a meal and a dish.

Put the pork belly into the pot and cook.

After the cooked pork belly cools slightly, slice it and set aside.

Cut the pot helmet into slices.

Soak the fungus until soft, wash and tear into small pieces.

Heat oil in a pan and add chopped green onions and ginger to the pan.

Add cooked pork belly.
