Laoganma Pork Belly + Sauerkraut Pork Belly Noodles
Overview
Please always be prepared to let others' needs meet your beauty, thus composing the beauty of your life! Just like the garlic sprouts in my dish, I originally planned to use scallions, but I opened the refrigerator and found garlic sprouts, so the garlic sprouts came in handy. The garlic sprouts in this Laoganma pork belly are really delicious! The originally ordinary garlic sprouts can now start a wonderful life with the distinguished guest of pork belly! Haha... (Laoganma’s pork belly is for 4 adults, and the pickled pork belly noodles are for 2 children)

Ingredients
Steps
-
Boil the pork belly in boiling water! (This should be the most disliked step in this dish, because washing the pork belly is so troublesome! I bought one that someone else had cleaned out the dirt inside. When I came back, I washed it with clean water, then boiled it in boiling water, and then washed it again. This way, it is easier to remove the unnecessary oil inside.)
-
Rinse after boiling.
-
Turn the pork belly inside out to remove the oil.
-
, remove the pork belly oil and then wash it with water.
-
Cut the pork belly into strips. (The size depends on your preference. My knife skills are not good, so it may be longer or shorter, but it does not affect the deliciousness of the dish, haha... Please call me Ms. Apple Q, my self-comfort ability is not bad!)
-
Stew pork belly in a casserole. Put the cut pork belly into a clean casserole, add an appropriate amount of ginger slices, add water, and simmer! (For those of you who have a pressure cooker at home, you can use a pressure cooker instead of a casserole. The time can be shortened a lot. My pressure cooker has been retired, so I use a casserole. It really took a long time to stew the pork belly. I boiled it over high heat to low and simmered for at least 3 hours! But this soup is really delicious!)
-
Stew the pork belly until it is cooked to your liking. (Look at this soup, it’s milky white. No wonder pork belly soup is milk soup! It looks nutritious!)
-
Take out the amount of Laoganma pork belly you will need! How many people need to eat is up to you.
-
During the slow cooking process of pork belly, you can prepare the side dishes first! Shred the sauerkraut and cut the tomatoes into cubes.
-
Cut celery, garlic and red pepper into sections.
-
Start cooking sauerkraut and pork belly noodles. Put the prepared sauerkraut and tomatoes into the pork belly soup and cook together.
-
After the soup boils, add the noodles until the noodles are cooked.
-
Add salt and chicken essence to the cooked pork belly noodles to taste.
-
Take the noodles out, sprinkle with chopped cilantro and serve. (The child’s work is done, now it’s time to do the adult work!)
-
Add oil to the wok, heat the oil, add the prepared celery, garlic and red pepper into the wok and stir-fry.
-
Pour in the prepared pork belly.
-
Add appropriate amount of water.
-
Add Laoganma chili sauce, I used 2 tablespoons.
-
Stir evenly and add appropriate amount of soy sauce.
-
Add appropriate amount of salt.
-
Stir fry evenly.
-
Remove from pan and plate.
