Prepare all the above main ingredients. Cut the carrots and broccoli into small pieces for easy frying. The mushrooms are Western-style white mushrooms, sliced and set aside. It is recommended to wash seafood with cornstarch to remove the fishy smell. The rice should be cooked in advance and allowed to cool, then add two eggs and mix well (don't mix the rice...)

Saute the shallots in the pan until fragrant, and stir-fry the carrots and broccoli. If you find it too hard to fry, you can boil these two things in water first.

Stir-fry the two vegetables, then stir-fry the rice with eggs. You can add appropriate amount of salt and black pepper according to taste. When you see the rice grains are clearly defined, add the vegetables and stir-fry for 1 minute before serving. After taking it out of the pot, place it in the final serving container for later use.

Melt the butter over heat. Don't use too high a temperature, otherwise it will burn quickly.

Wrap the surface with foil and bake in an oven preheated to 375 degrees Fahrenheit (about 190 degrees Celsius) for 15 minutes. After 15 minutes, remove the tin foil to expose the cheese and continue baking for 3-5 minutes. It is recommended to observe the charring state of the cheese while grilling, as long as it is grilled until golden brown. If the oven has a heat function, you can directly turn on the high heat and bake for 1-2 minutes and it will be OK.
