Overview
Originally I didn’t like to eat Spanish mackerel, but my husband likes it. I made this today and it tastes pretty good!

Steps
-
Remove the internal organs of the Spanish mackerel, wash and cut into pieces, and cover with cooking wine for 10 minutes.
-
Cut the tofu into cubes, chop the onion, ginger and garlic and set aside
-
Heat oil in a pot, add onion, ginger and garlic and sauté.
-
Add dark soy sauce, soybean paste, vinegar and stir-fry until fragrant
-
Add the mackerel pieces and stir-fry a few times.
-
Add water just enough to cover the mackerel, bring to a boil over high heat, then reduce to medium to low heat and simmer for about 8 minutes
-
Add the tofu and simmer until the juice is reduced. Turn the fish over to avoid burning the pot.
-
If you add light soy sauce and soy sauce, you don’t need to add salt.
-
Plate and sprinkle with coriander.
