Slice the garlic cloves, cut the ginger into shreds, fry in oil until fragrant

Add minced beef

Fry the minced beef until fragrant

Add bean paste, oyster sauce, a little dark soy sauce, chili oil, Sichuan pepper oil, a little crushed chili, stir-fry

Add water, cover the pot and simmer for a while

Add tofu (you can blanch the tofu before adding it, I didn’t blanch it for simplicity), add salt and chicken essence

Don't stir-fry the tofu too much, otherwise it will break. Add water, cover the pot and simmer the tofu, then add water starch to thicken it, and add green onions

Remove from the pot and place on a plate, gently scoop up the tofu, then pour the remaining sauce and minced beef in the pot over the tofu
