The sticky rice eggs that are popular among friends
Overview
As a foodie, a senior foodie, and a foodie who can tell the name of the restaurant he is in just by looking at other people’s food posts, there is one situation that is absolutely intolerable: When browsing Moments, I find food that I have never eaten before, but it looks delicious! Recently, there is such a product that I can't forget, it is glutinous rice egg! Chinese culture is extensive and profound, and Chinese food culture has been passed down for thousands of years. Even today, Chinese people are still so persistent in studying food. They can figure out a variety of cooking methods no matter what ingredients they are, and even an egg can be made into various tricks! And for someone like me who destroys eggs the fastest in the house, this glutinous rice egg is simply to my liking! Most people who don't like eggs can eat egg whites without accepting egg yolks. I am just the opposite. I only eat egg yolks and not egg whites. I don't know how many egg whites I secretly threw away when I was a child. I was often scolded by my mother for this. If food like glutinous rice eggs had existed at that time, I probably would have been criticized a lot less! Fortunately, the lovely foodies have developed it. I am especially happy for friends like me who don’t like egg whites, because they have good reasons not to eat egg whites! And when it comes to the ingredients, in addition to the salty egg yolk with a salty aroma and oil, you can put whatever you like! It is said that the recipe for glutinous rice eggs comes from Zhuji, Zhejiang. As a foodie who loves to do things, I have always believed in the principle of self-reliance and adequate food and clothing, so I decided to try it myself. Whatever you want to eat, you have to make it with tears in your eyes!

Ingredients
Steps
-
Wash the glutinous rice and soak it in water for three hours!
-
Wash the dried mushrooms and soak them in water for 15 minutes
-
Peel the lotus root and cut into small cubes. The ones I cut myself are actually finer than the picture.
-
Soaked dried shiitake mushrooms and finely diced crab sticks and chicken sausages. The diced braised pork was leftover from when I made braised pork before, so I didn’t take any pictures
-
Put a little oil in the wok, fry the ginger slices, green onions and star anise until fragrant and turn off the heat
-
Then put in the soaked glutinous rice and diced braised pork and other cut ingredients (the braised pork is what I made before)
-
Add cooking wine and soy sauce and salt, stir, and the glutinous rice egg filling is ready
-
Make a slit on the pointed side of the raw salted duck egg and let the egg white flow out, leaving only the yolk. The opening doesn't need to be too small, so it's easier to put the stuffing in. I cut the salted eggs with a sharp knife, so please be careful when doing it! As long as it maintains a relatively intact egg shape, it doesn't matter what utensil you use.
-
Put the glutinous rice filling into the duck egg from the small opening.
-
After filling them all, if the opening of your duck egg is too big, you can wrap the glutinous rice egg with tin foil, or you can cover it with the cut-off egg skin like I did.
-
After the duck eggs are filled, steam the fragrant glutinous rice eggs for 1 hour and they are ready
