Water tofu
Overview
She learned a side dish from the Hong Kong TVB program "Sofar Su Good". According to her memory, it was a side dish she often ate when she was a child. Her family was large and the economy was not well-off. There were seven or eight people in the family and there were not many dishes. In order to feed the family, the elders always liked to make the dish "Water Tofu" with tofu pudding. At that time, tofu pudding was quite cheap. As soon as the food was served, several brothers and sisters, some with fast hands and others with slow hands, placed a large spoonful of watery tofu on the bowl, stirred it with the rice, and the whole bowl of rice was wiped out in a short time. Now that the economy has improved a lot, I sometimes go out for a while, but I don’t always get a meal, and occasionally I eat some imported (foreign) food. But if I don’t eat for two or three days, I feel like I can’t live well, and I don’t want to cook too much, so I made a big pot of water tofu according to Aunt Su’s method. It’s hard to find authentic tofu pudding. Fortunately, there are boxed soft tofu available in the market. I feel that this dish is good for the elderly and children to eat. It contains meat and protein, and is easy to chew without suffocating the throat.

Add light soy sauce, 1/2 tsp Sichuan pepper powder (to remove the fishy smell), 1/2 tsp pepper, 2 tsp light soy sauce, 1/2 tsp sugar, 1/2 tsp cornstarch to the minced meat, stir evenly;

Cut the mushrooms into pieces;

Separate the green and white scallions from 2-3 green onions, cut them into pieces, use a small bowl, add 1/2 tablespoon of corn starch and 1/2 small bowl of water, stir evenly;

Use a pot, pour in seasoned minced meat, mushrooms and 1/2 cup of stock or water, cook for a while;

Pour in scallions and stir a few times;

Use a relatively flat spoon to scrape the soft tofu into the pot one by one. Do not put in large pieces or whole lumps, as this will not taste good;

Use a bowl to mix 3-4 tablespoons of light soy sauce, 1 tablespoon of dark soy sauce, 1/2 teaspoon of sugar and water starch, and pour them into the tofu pot; 8. Cover the lid for 5-7 minutes;

Cover with lid for 5-7 minutes;

Add half of the green onion, pour 1/2 tsp of sesame oil, do not stir, but shake the pot a few times, then slowly pour the whole pot into a large bowl; then evenly sprinkle the remaining half of the green onion on the surface, and you're done.
