Braised chicken with soy sauce

Chop the chicken into small pieces, rinse with water several times to remove blood, drain and set aside.

Heat oil in a pan and add chicken pieces.

Stir-fry over medium-low heat until the surface is golden brown.

Add onions and ginger, and pour a circle of cooking wine around the pot to remove the fishy smell.

Add a spoonful of soybean paste and a spoonful of sweet noodle sauce.

Stir well and stir-fry to bring out the aroma of the sauce.

Add enough water to cover the chicken pieces, and remove the onions and ginger.

Add a few grains of rock sugar, one spoonful of dark soy sauce, two spoons of light soy sauce, and one spoonful of pepper. Bring to a boil over high heat, then reduce to low heat and simmer for about 25 minutes.

Reduce the juice over high heat, remove from the pan and serve on a plate, sprinkle with chopped green onion.
