  1. Chop the chicken into small pieces, rinse with water several times to remove blood, drain and set aside.

  3. Stir-fry over medium-low heat until the surface is golden brown.

  4. Add onions and ginger, and pour a circle of cooking wine around the pot to remove the fishy smell.

  5. Add a spoonful of soybean paste and a spoonful of sweet noodle sauce.

  8. Add a few grains of rock sugar, one spoonful of dark soy sauce, two spoons of light soy sauce, and one spoonful of pepper. Bring to a boil over high heat, then reduce to low heat and simmer for about 25 minutes.
