Pork Ribs in Coconut Sauce
Overview
I bought 9 coconuts in the original box. It was cold and my family didn’t like to drink them, so I left all the tasks of 9 coconuts to me, a novice cook. To be honest, I don’t really want to drink it, it’s really a bit cold. Put them all in the refrigerator and wait for the weather to get warmer. After a long time, I was worried that it would spoil, so on a whim, I opened one today and added it to the dish. Unexpectedly, the taste of the spareribs with fresh coconut milk is very sweet. It has changed from the pure sweet taste of just adding rock sugar in the past, and it has a slight aftertaste of fragrance on the lips and teeth. 😉

Wash the spareribs, blanch them in water for 2 minutes, and wash them again;

Cut green onions into sections and slice ginger;

Heat oil in a wok, add green onions and ginger slices and saute until fragrant, add pork ribs and stir-fry for a while;

Add light soy sauce, dark soy sauce, rock sugar, and salt;

Stir-fry over medium-low heat for 2 minutes;

Pour in fresh coconut milk;

Cover and bring to a boil;

Add baby carrots (dried beans are marinated by the way);

Simmer over low heat until the soup thickens;
