Sweet potato rice cake
Overview
I made glutinous rice into fruity rice dumplings before, but my kids didn’t eat enough. Today, I had a different breakfast, with the same glutinous rice dumplings. Add some glutinous rice flour or cornstarch to the sweet potato puree and knead it into a dough. It’s the same without adding any flour. Use the sweet potato dough to wrap the glutinous rice dumplings, and the rice will turn into sweet potato pancakes. Once baked in a pan, it’s simple and quick. The sweet, soft and glutinous pancakes will be served to the table in minutes. It’s delicious and nutritious. Make more at a time. If you cook less, it won’t be enough. Eat it open and you won’t gain weight.

Crush the uneaten sweet potatoes into sweet potato puree and add an appropriate amount of cornstarch. You can choose what kind of flour to add according to the situation. For example, if the sweet potato puree is very thin, just add flour. Sweet potato puree is very dry. Adding glutinous rice flour or cornstarch mainly plays a binding role. Adding too much glutinous rice flour or cornstarch will not taste good.

Knead the dough. If you like sweetness, you can add some sugar. I didn't add it. Sweet potatoes are very sweet, so you don't need to add it. There are also dried fruits in the filling that are also very sweet.

Wash all kinds of dried fruits, cut the hawthorn cake into cubes, add the washed various dried fruits to the glutinous rice, mix well, and then make glutinous rice dumplings.
