Cut the tofu into small cubes, chop the onion, ginger and garlic into small pieces. Pour two spoons of light soy sauce, three spoons of cold water and one spoon of fine sugar into a small bowl, mix well and set aside;

Pour an appropriate amount of water into the pot and add a little salt (put a little salt when blanching to prevent the tofu from sticking together). After the water boils, add the tofu cubes and blanch them, then remove and drain the water;

Pour oil into the wok, heat it up, add chopped green onion and chopped ginger and saute until fragrant;

Add two tablespoons of Pixian bean paste and stir-fry until fragrant, then add one tablespoon of cooking wine and stir-fry for a while;

Pour in the tofu cubes and push them gently with a spatula, then pour in the prepared sauce;

Add half a small bowl of water, push it gently with a spatula, cover the pot and cook over medium heat for about three to five minutes;

When the soup is slightly thickened, turn off the heat;

Take it out, sprinkle a little green onion on the surface and eat.
