When I go back to my hometown in Hunan during the Qingming Festival, I pick wild bamboo shoots from the mountains, stir-fry meat, stir-fry pickles, steam eggs, or make soup. It tastes really good. Dear friends, do you recall your childhood days?

Tear off the outer skin of the bamboo shoots, cut off the old roots, and cut into small sections diagonally

Put water in the pot, boil it and pour in the bamboo shoots. After blanching, take them out and drain away the water

Slice lean meat, add salt, cooking wine, starch, and a little cooking oil and mix well

Put the wok on the fire, pour oil, when the oil is hot, add the meat slices and stir-fry until the color changes, then take it out; sauté the ginger and garlic

Pour in the bamboo shoots and stir-fry, add salt and continue to stir-fry for a while

Pour in the meat slices and stir-fry until the flavors are infused. Pour in a small amount of soy sauce and stir-fry evenly. Turn off the heat and remove from the pan.
