Chop the chicken into small pieces and blanch it for 5 minutes, remove and drain. Heat oil in the pot, add ginger slices, stir-fry, add appropriate amount of rice wine and stir-fry evenly.

Transfer to a casserole, add red dates, ginseng, appropriate amount of water, bring to a boil over high heat, then reduce to low heat and cook until the chicken is cooked through.
