Sweet potato rice cake
Overview
Sweet, soft and glutinous sweet potato rice cakes are very simple and convenient to make for breakfast. I happened to have some leftover rice at home and joined in, which solved the problem of leftover rice very well. It doesn’t matter if there is no leftover rice. Sweet potato pancakes made with just flour and sugar are also delicious.

Clean the sweet potatoes and steam them in a pot.

Let it dry for a while, peel it, then put it in a plastic bag and use a rolling pin to crush it into a puree.

Add mashed sweet potatoes, leftover rice, flour, and sugar to a large bowl.

Mix evenly into a slightly soft dough.

This dough is very sticky, so use more dry flour when working with it. Form into a uniform ball shape.

Use a heart mold to punch out the shape. Just press it into a round cake shape without a mold.

Heat a pan, add a little vegetable oil, add sweet potato pancakes, and fry until golden brown on both sides.
