Spring Festival fancy steamed buns with bean paste
Overview
Every year on the night before New Year's Eve, my family will steam a lot of steamed buns and bean paste buns. As soon as the steaming steamed buns and bean paste buns come out of the pot, grab one quickly. They are sweet, soft and delicious. This year I gave the steamed buns a twist, making them soft and cute, and I kept making them one bite after another. The Spring Festival is here. Dissolve the yeast with warm water, pour in the flour, and stir to disperse. Pour the hot water into the flour little by little and stir until it becomes fluffy.

Knead into a ball and place in a warm place to rise. After about 2 hours, the volume will double.

Take out the risen dough and place it on the cutting board and knead it briefly. If you have baking powder at home, you can add a small amount of baking powder when kneading and knead. Knead evenly and let it rise for 10 minutes before kneading into a ball. If you don't have baking powder, you don't need to add it. (The purpose is to help thicken the hair and sweeten it)

Knead the dough into a long, thick strip.

Cut into large pieces and make dough.

Make a little hedgehog first. Take a small piece of dough and knead it into a ball.

Make a V shape with your hands, gather together slightly along the bottom of the dough, and knead the small dough into an inverted triangle. (The mobile phone in the right hand is not in the frame when taking pictures)

Pick up the dough and arrange it slightly, making one end slightly pointed (hedgehog head) and one end slightly rounded (hedgehog butt).

Use the tips of scissors at a slight angle to cut a small corner from the tip of the dough back to make the thorns of a small hedgehog. Finally, decorate the little hedgehog’s eyes with two grains of black rice.

Make the bunny again. Take a small piece of dough and cut it in half.

Use your hands to form a long strip as long as the chopsticks, about the same thickness as your index finger. Dip water between the two noodles and bring them together.

Bend the noodle about two inches above the noodle, and curl the lower noodle in the opposite direction to the upper noodle. Approximately S-shaped.

Place the steaming curtain, add the steamed buns, and steam in a pot with cold water. Turn on high heat first, start the timer after the steaming water starts steaming from the side of the pot, set high heat for 10 minutes, then turn to low heat and steam for another 10 minutes. It will take a total of 20 minutes. After turning off the heat, be sure not to open the lid in a hurry and continue to simmer with the residual heat for 10-15 minutes. This will help the steamed buns expand and shape without collapsing or shrinking. Otherwise, if the steamed buns suddenly become cold after boiling the pot, they will definitely shrink. Boredom is to use the residual temperature to cool down little by little.
