Secret Braised Pork
Overview
I often make braised pork, and after making it again and again, I feel that this method is better. The meat is soft and waxy and is easier to color. So usually when I have plenty of time, I will use this method with a bowl of rice. It is really delicious

First put the meat in the pot and cook for a while, then add onions, ginger, garlic and cooking wine to remove the fishy smell and dirt

Cut the almost cooked pork belly into cubes

Put the cut pork belly into the pressure cooker and pour in the cooking wine

Pour oil into the pot, add rock sugar, and stir-fry the sugar color

After the rock sugar is fried, add the stewed pork belly. Stir-fry meat until browned

Add water, light soy sauce, onion, ginger, garlic, fennel, and cooking wine. Reduce the juice over high heat, add a little MSG, and serve on a plate, then sprinkle with a little chopped green onion
