Wash the shrimps, remove the yarn, blanch them and set aside.

Wash and dice onions and lettuce and set aside.

Wash the potatoes, peel them, steam them, and crush them into mashed potatoes with a spoon.

Mix flour, eggs, water, light soy sauce, mirin, and mashed potatoes into a roux.
