Buy back several sweet potatoes of similar shape and size, making sure they weigh 500g after peeling.

Wash and cut the sweet potatoes into shuttle shapes of basically the same size, with a total weight of 500g.

Wash the peeled sweet potatoes and boil them in water until they are five ripe, drain and set aside.

Pour the sugar into the pot and stir-fry.

When the sugar is completely dissolved and turns dark brown, add lemon juice.

Then add orange juice.

Add orange zest.

After the sugar juice has boiled for 5 minutes, add the sweet potatoes and add water (just submerge the rainbow potatoes). Bring to a boil over high heat, then reduce to medium to low heat and simmer. Use a shovel to gently stir 4-5 times.

When the sugar sauce is cooked until thick and the juice is reduced, remove from the pan and put it on a plate. After the plate is put on the plate, pour the remaining sugar juice over the sweet potatoes.
