Prepare fish head and tofu.

Heat oil in a pan until 70% hot.

Add fish head and fry until fragrant (add shredded ginger).

Flip and fry again, add cooking wine to remove the fishy smell.

Add boiling water, bring to a boil over high heat, then turn to low heat and simmer for about 10 minutes.

Add tofu (cut into large pieces), season with salt, chicken essence, and pepper, and cook for another 5 minutes to add flavor.
