  1. Rinse the quinoa with water, add the quinoa to the pot and cover with salted water. Bring to a boil, cover, lower to low and simmer for about 15 minutes, until al dente. Stop heating, cover and let stand for about 5 minutes.

  2. Peel the carrots. Cut sweet potatoes, apples and carrots into bite-sized pieces.

  3. Fry the sweet potatoes in a large pot over medium-high heat for 6-10 minutes, until golden brown and al dente. Add the carrots and continue to stir-fry for 3-5 minutes.

  4. Add sweet potatoes, apples, carrots, spinach, raisins and cashews to a large bowl and mix well.

  5. Make the sauce by combining mustard, honey, balsamic vinegar, olive oil, salt and pepper. Pour the dressing over the salad and toss gently. Enjoy hot or cold!
