Steps
-
Prepare the required ingredients.
-
Soak the red dates in warm water for 15 minutes, then wash and drain the water.
-
Cut into pieces and set aside.
-
Mix cornmeal, rice flour, glutinous rice flour, and sugar and mix well.
-
Add 120 grams of water to the flour in batches. (Knead the flour while adding)
-
Knead the flour into slightly wet coarse powder. (Because cornmeal is added, the kneaded powder should not be too dry, but should be moist, so that it will not feel thick in taste)
-
Just use your hands to gently knead it into a ball.
-
Sieve the powder twice, this is what it looks like the first time. (Because the powder particles are relatively wet, the sifting process is a bit slow, but don’t rush. This step is the most patient-testing step.)
-
Sieve it for the second time.
-
Place a circle of red date cubes on the bottom of the silicone mold. (The shape of the mold is arbitrary)
-
Spread a layer of sifted corn cake flour, then sprinkle with red dates.
-
Repeat with a layer of corn cake flour and sprinkle with red dates.
-
Spread another layer of corn cake flour and sprinkle with red dates.
-
Finally, sprinkle a little corn cake flour and lightly smooth the surface.
-
Put the prepared cake base into a steamer and cover it with cold water. After the fire is on the steam, turn to medium heat and steam for 25 minutes.
