Overview
Small noodles are one of the favorite noodles among the Hui Han people in Ningxia. The so-called small pulled noodles are the noodles as big as fingernails. The noodles are pulled directly into the fried noodles. The noodles are fragrant with vegetables and there are noodles in the vegetables. The color is bright and red. The two are blended together.
