To make dumplings, you need to buy ready-made dumpling wrappers, and the other is to knead the dough and roll the wrappers yourself. To roll the wrappers yourself, you need to knead the dough first, knead it into a slightly soft dough, cover it with plastic wrap or a damp cloth, and let it rest for at least 30 minutes;
-
Clean the shrimps, drain and set aside;
-
Add a small spoonful of about 3 grams of ginger powder to the pork filling;
-
Put a tablespoon of soy sauce, about 10 grams; a tablespoon of cooking wine, about 5 grams; add about 3 grams of salt; stir well and then add water little by little, not too much water. Finally, add a tablespoon of vegetable oil, about 10 grams, and stir evenly;
-
Wash and chop leeks
-
Put the pork stuffing and leeks in a mixing bowl, add about 2 grams of salt to the leeks and mix well;
-
Put a tablespoon of vegetable oil on the leeks and mix well to cover the water;
-
Finally, mix the pork stuffing and leeks;
-
After the stuffing is mixed and the dough is proofed, knead it smooth and roll it into long strips, then cut it into appropriate-sized pieces;
-
Roll it out into dumpling skins. Personally, I feel that oval ones are easier to wrap;
-
Put the fillings on top and put a shrimp on top;
-
Wrapped dumplings;
-
Pour a wide amount of water into the pot, lower the dumplings into the boiling water, put the dumplings into the pot, and push them gently with the side of a rice spoon to avoid sticking to the bottom of the pot;
-
After boiling for three times, add a little cold water, boil the pot again, and take out the dumplings;
-
The dumplings are dipped in vinegar, they are delicious, and the shrimps are out.
