Wash the scallions and cut into small pieces and set aside

Mix very fresh soy sauce, sugar and appropriate amount of oil into a juice and set aside

Add more oil to the pot, heat up and fry the green onions over medium-low heat until fragrant

When the green onions turn brown, add the chive leaves and continue frying

When the green onion leaves turn brown, pour in the prepared sauce and bring to a boil, then turn off the heat

Bring another pot to a boil, add water and start rolling out the noodles

Pour the cooked noodles into cold water, drain the water, add appropriate amount of scallion oil, mix well and enjoy
