Thaw and wash the lobster tails (I bought them quick-frozen)

Boil water in a pot and blanch the lobster tails for 2 minutes

Remove the blanched lobster tails, drain the water, and slice the green onion and ginger

Put an appropriate amount of oil in the pot, sauté the peppercorns, dried chili peppers, green onions and ginger until fragrant

Add the lobster tail and stir-fry, add oyster sauce, salt and sugar and continue to stir-fry, add a small amount of water, cover and simmer for 2 minutes

After the water has almost dried up, add the coriander segments and stir-fry evenly
