Put water in the pot, add chicken pipa legs, cooking wine, aniseed, onion and ginger, and cook the chicken legs.

Bring to a boil over high heat and scoop out the foam. Reduce the heat to low, cook the chicken legs and take them out.

Chop the coriander and mince the garlic and set aside.

Add cold oil to the pan, fry the peanuts and set aside.

Make a sauce. Umami soy sauce + light soy sauce + oyster sauce + sesame oil + a little salt + a little sugar + chicken broth.

Remove the bones from the cooked chicken legs and tear into small pieces with your hands.

Put the chicken in a basin, add coriander and minced garlic, pour in the sauce and mix well.

Finally add peanuts and mix well.
