Crab racing
Overview
Seafood is delicious, especially crabs. Although crabs are delicious, due to the influence of the season, you either can't buy them when you want to eat them; or you spend a lot of money and buy very little crab meat, as if you just bought a bunch of crab shells. Fortunately, I learned a delicious dish from my elders. Although its main ingredients are only eggs and fish meat, the taste of the finished dish will not be inferior to that of real crabs. This is the recipe I want to share with you today - racing crabs.

Steps
-
Here are all the materials needed. Eggs, fish, shrimp, green onions, ginger. There are also seasonings: chicken essence, vegetable essence, salt, cooking wine, starch, oil and water. (You can choose shrimp and fish, the total amount is 200g)
-
First, after the steamer is filled with air, put the fish and shrimp into the steamer (I put the fish and shrimp at the same time today for your reference) and steam over high heat for 3-4 minutes.
-
While the fish is steaming, let's prepare the minced green onions, minced ginger, and ginger juice. (If there is no small dish for ginger juice, we can flatten the ginger, then put it into a small bowl and mash it with a rolling pin.)
-
Steam the fish and shrimp and let them cool.
-
While it's cooling, let's make a bowl of gravy. Put the chicken essence, vegetable powder, salt, cooking wine, chopped green onion, ginger juice, and starch into the bowl, add water and mix thoroughly.
-
At this time, the fish and shrimp have cooled down. Tear the fish into small pieces and cut the shrimp into small dices and set aside.
-
Let's prepare the main ingredient of this dish - eggs. Three whole eggs are required, and the remaining three eggs are only yolks. (Because the eggs I bought this time were relatively small, I put a few more. If they were normal-sized eggs, 6 would be enough for three people)
-
Beat the eggs. Because there are more egg yolks than egg whites, the color of the eggs will be particularly beautiful.
-
Well, all the preparations are done. Now let’s fry this Sai Crab.
-
Heat the wok and put in the oil. Don't wait for the oil to overheat before adding the eggs. When the oil temperature reaches 60-70% hot, put the diced ginger into the pan. When the diced ginger bubbles, you can add the eggs and beat them up. (Make sure the eggs are tender, you can add a little water when beating the eggs)
-
Add shrimp and fish and stir-fry.
-
Stir well and put into a bowl of gravy. Wait until the juice thickens.
-
Add minced ginger and mix well. Remove from pan and serve. Okay, this crab dish is ready.
