Beat the eggs and spread them into egg cakes (egg skin). Cut avocado into thin strips. Carrots and cucumbers, etc. can also be used. Carrots need to be blanched.

Blanch cuttlefish and cut into shreds. Put 1 tablespoon of vinegar (it seems that sushi vinegar is better) or a little more in a deep plate, add sugar, salt, half a cup of uncooked rice, about 2 taels of rice, add a little sesame seeds, and mix well.

Egg skin, avocado, shrimp, cuttlefish shreds, etc. are placed on top of the rice. Also pave a horizontal path. Try to spread out the various ingredients as much as possible, otherwise it will be difficult to roll them up in the end, causing everything to fall apart.

When rolling sushi, be sure to make it more than just a circle. If there are less ingredients and the rice is spread thinly, you can roll it into several layers. Use a sushi curtain to hold on the outside. Cut into sections and serve on a plate. The knife should be as fast as possible. It is said that dipping it in water will help to cut it neatly.
