Cut the beef tenderloin into cubes, cut the onion and ginger into mince, and cut the red pepper into small cubes and set aside;

Put the beef cubes, minced onion and ginger, egg white, baking soda, and white wine into a container, mix well, stir well, put it in the refrigerator, and marinate for one night;

The next day, add soy sauce, black pepper juice, and black peppercorns to the beef cubes and marinate for a while, no more than 20 minutes;

While marinating, boil water, put the edamame and ginkgo into the pot and cook for a while until they are raw; blanch the red pepper in boiling water and set aside;

Heat the oil pan, but not too hot. When it is slightly warm, add edamame and ginkgo and stir-fry, then add red pepper and stir-fry, add salt, stir-fry and set aside;

Heat the oil pan, the oil should be spicy and smoking, put the marinated beef cubes into the hot oil pan, stir-fry quickly over high heat, quickly cut the meat cubes with a spatula, about 1 minute, then reduce the heat to low, add the ginkgo, edamame, and red pepper, stir-fry, increase the heat to medium, mix well and put it in the pan.
