Cut 100g of cowpea into two finger lengths.

Blanch in boiling water until raw and remove.

Heat an appropriate amount of oil in a pot, stir-fry ginger, garlic, Sichuan peppercorns, and millet pepper until fragrant.

Pour in the blanched cowpeas and stir-fry a few times.

Appropriate amount of salt and light soy sauce to taste.

Stir fry twice.

Pour in quinoa rice.

Stir-fry until heated through, turn off heat and serve.
