Shrimp and Egg Fried Rice
Overview
Egg fried rice is the best way to get rid of leftover rice. Egg fried rice ingredients can be mixed as you like. Today I fried it with diced onions, diced green peppers, diced sausages, diced fungus, eggs and shrimps. I added some cumin powder during the frying to give it a more special taste.

Dice the shrimps and marinate them with salt and cooking wine. Dice the green peppers, onions and sausages. Soak the fungus, blanch it in hot water and cut into cubes. Stir the leftover rice evenly to save time when frying. Add some salt and pepper to the egg liquid and mix well. Set aside chopped green onions.

Beat the egg liquid, scramble the eggs, cut them into small pieces with a spatula, and set aside.

With the remaining oil in the pot, fry the diced shrimps and set aside.

Add some oil to the pot, add chopped green onions and sauté until fragrant. Add diced onions, diced fungus, and diced sausages and stir-fry. Add rice and stir-fry.

Add light soy sauce and continue to stir-fry. Add diced green peppers, eggs, and shrimps and stir-fry evenly. Add salt, pepper powder, cumin powder, and chicken essence to taste.
