Gold-wrapped fried rice
Overview
On March 30, 2014, it was raining continuously outside the window. The rain that started last night has not stopped yet, and the temperature in Chongqing has dropped again. For breakfast, I used the leftover rice from last night to fry gold-coated silver fried rice without any other side dishes. The egg liquid is golden and the rice grains are silver, so it is called gold-wrapped silver fried rice.

Break the eggs into the rice, mix well with a spoon, be careful to break up the rice and coat it evenly with the egg liquid (as shown in the picture).

Chop green onions.

Heat the pan with cold oil. When the oil is hot, add the rice coated in egg liquid and fry slowly over medium heat. I need to remind you that the rice coated in egg liquid needs to be fried for a little longer, but not too long. If it is too long, it will be too dry. You can observe that the rice starts to loosen and start to "dance" in the pot. If you are not sure, you can taste the softness of the rice at any time and decide according to your own preference.

Add refined salt, turn off the heat, add chopped green onion and mix well.
