Stir-fried chestnuts with mushrooms
Overview
Eating shiitake mushrooms regularly can improve the body's immunity and delay aging. Shiitake mushrooms are a good match with vegetables. It's delicious whether cooked, stewed or stir-fried.

Clean the mushrooms and prepare the ready-made chestnut kernels I used.

Mince the ginger and cut the green onions into small pieces.

You can tear large mushrooms in half, or cut small ones with a flower knife, as you like. Boil water in a pot, add the mushrooms and cook over low heat for 2 minutes.

Remove after cooking.

Heat oil in a wok and fry the minced ginger until fragrant.

Put the mushrooms and chestnuts into the wok at the same time and stir-fry.

Add some soy sauce.

Add about a bowl of stock or water.

Add pepper.

salt.

Cover and simmer for 3 minutes.

Water starch is ready.

When the soup is almost dry, add the green onions.

Thicken the gravy, stir-fry it evenly and drizzle some sesame oil.
