Soak the pork ribs in cold water until they bleed.

Put the ribs into a pot of cold water, pour in the cooking wine, bring to a boil over high heat, and cook until the foam comes out. Rinse off the foam with warm water.

Cut green onion into sections and slice ginger.

Pour a small amount of cooking oil into the pot, add the ribs and fry until golden brown.

Add light soy sauce and dark soy sauce and stir-fry until coloured.

Add the seasoning from step 3 and continue to stir-fry a few times.

Put it into an electric pressure cooker, pour water to cover the ribs, and add salt.

Simmer for 45 minutes.

Transfer to a wok and reduce the sauce over high heat.

Remove to a plate and add cilantro segments.
