The main materials are ready;

Slice ginger and garlic, cut dry chili into small pieces and set aside;

Wash, drain, and cut the chicken into small pieces. When cutting the chicken wings and legs, use the back of a knife to loosen the chicken bones before cutting. Drain and set aside after cutting;

Take a wok and add oil. When the oil is hot, add the chicken and stir-fry for 1 minute. Add the ginger slices and stir-fry for another 1 minute. Add the garlic slices;

Then add 2 tablespoons of light soy sauce and continue to stir-fry for 3 minutes before adding the dark soy sauce to color;

After stir-frying well, add the Sichuan peppercorns and stir-fry for 1 minute, then add the dried chili pepper segments and stir-fry until the dry chili peppers are red in color, add 2 teaspoons of sugar, stir well and turn off the heat.

Use a slotted spoon to take out the spicy chicken, drain and put it on a plate;

Just sprinkle some white sesame seeds at the end.
