There are many ways to cook eggplant, such as minced meat eggplant, fish-flavored eggplant, bacon eggplant, etc. Today is my mother’s fasting day, so I will make a very simple and homely dish of eggplant dipped in water. Since it is dipped eggplant, it must be dipped in water. There is a key seasoning in this dipping seasoning, which is bitter garlic. Bitter garlic is called bitter garlic in my hometown of Chongqing. It is usually burned in eggplants or dipped in seasonings to eat. It can also be stewed in chicken, duck, or belly. It tastes very good. This bitter garlic was mailed by my parents a few days ago together with southern vegetable seeds. Since there was a lot of bitter garlic in the mail, I planted some and used the rest to make dishes.
