I am used to eating fungus scrambled eggs. This time, cashew nuts and eggs are the protagonists. It does not require too much seasoning. It is light and delicious with the freshness of eggs.

Process the cashews first, turn on the heat, pour a small amount of oil into the pot, add the cashews and fry slowly until golden brown.

Add water to the pot, bring to a boil, add black fungus, blanch, and remove.

Crack the eggs, beat the egg liquid evenly, cut the green peppers into small sections, and chop the green onions into finely chopped pieces.
