Double onion meatloaf
Overview
I have loved eating my mother's chopped scallion pancakes since I was a kid, but now I don't know why the scallion pancakes I make have almost no onion flavor when I eat them. Is it because the onions don't taste as strong as they did when I was a kid? I got greedy today and made a meatloaf. I made some innovations when making it. I made the meatloaf according to the method of making scallion pancakes. In order to better reflect the onion flavor, I suddenly thought of using onions as a filling and then sprinkled a layer of chopped green onions on top of the meat filling. It will look good and good after it is done. Eat, because onions have a lot of water, so onions are added to the meat filling to improve the taste of the meat filling. A layer of minced shallots sprinkled on the surface not only adds green color to the meat patties, but also has the unique aroma of shallots. I feel that the meat patty made by this combination is quite good. If you are interested, you can try it. But when I was making it, my habit of loving the past came back. After rolling out the first one, I forgot to add the chopped green onions. I was very depressed, so I quickly added it to the second one! So the process diagram is in two colors. What should I do with my brain? Hey!

Ingredients
Steps
-
Prepare low-gluten flour, pork, onions, spring onions, ginger, light soy sauce, salt, and sesame oil.
-
Weigh 400 grams of low-gluten flour into the inner pot of a chef's machine and add 250 grams of water
-
Knead the dough in a kitchen mixer for 3 minutes
-
Arrange the dough and cover with a damp cloth to rest for 1 hour
-
Cut the pork into large pieces, cut the onion into large pieces, and mince the green onions and ginger.
-
First put the large onions into the meat grinder
-
Close the lid and press the switch to grind the meat for a few seconds
-
After a few seconds, the onions will be very finely chopped, then pour the minced onions out into a bowl.
-
Stir the minced onion with a spoonful of sesame oil and set aside.
-
At this time, put the large pieces of pork into the meat grinder
-
Cover the lid and use the on-off switch to mince the large pieces of meat into minced meat (because the resistance of mincing meat is greater than that on onions, so on-off switch is used to avoid overloading the machine.)
-
Grind the meat filling to the thickness you like and remove the blade from the middle of the cooking cup.
-
Put the minced ginger in and then add two tablespoons of sesame oil.
-
Add another three tablespoons of light soy sauce and stir well.
-
Place the rested dough directly on a chopping board dusted with dry flour, divide it into two parts, roll it into a square shape, and cut into four pieces as shown.
-
After the dough is rolled out, mix the onion and meat filling and add 6 grams of salt and mix well.
-
Spread the meat filling evenly on the dough, leaving a corner without meat filling.
-
Sprinkle another layer of chopped green onions on top of the meat filling
-
Then fold up one corner of the dough as shown
-
Fold the left one up as well
-
Fold it upward as shown in the picture, and then repeat steps 19 and 20 until the meat filling is wrapped in the dough.
-
Finally, pinch the four sides and tidy them up
-
Use a rolling pin to roll the cake into a dough
-
Preheat the electric baking pan, put a piece of oil paper on it and apply some oil, then put the cake base on it, brush some oil on the cake base with a brush, cover and heat for 8 minutes.
-
When the timer is up, take out the meatloaf and cut it into pieces and start eating!
