Coffee Oatmeal Pulp Cookies
Overview
It's sunny outside and I'm home alone. Let's make some simple afternoon tea. The reference is Junzhi's oatmeal grape cake, but I have coffee at home, so I replaced the brown sugar with coffee, and used a portion of dried apples to make the pulp, reducing the oil and sugar appropriately.

Pour salad oil into a bowl and beat in eggs

Add powdered sugar and coffee powder, stir thoroughly, and set aside. Please ignore the number displayed on the electronic scale:)

Take another night, add flour, oats and baking powder, mix well

Pour the powder from 3 into 2 and stir evenly

To form a batter, take some dry flour on your hands, take a little batter, roll it into a ball and flatten it into a baking pan

The made cookies are finally put into the preheated oven

Turn the heat up and down, 170 degrees, about 15 minutes, keep an eye on it, it's almost ready:)
