Cut the potatoes into thick strips, slice the garlic, cut the peppers into small pieces, and chop the green onions and coriander.

Blanch the potatoes for about 1 minute and remove to drain out the water.

Add twice as much oil to the wok as usual for cooking, and heat it up to 70-80% over medium-low heat. Add the potato strips until the surface is slightly brown, take them out and set aside.

Leave a little base oil in the wok, add Sichuan peppercorns, star anise, and red pepper over medium-low heat and stir-fry until fragrant. Add garlic slices and ginger slices and stir-fry until fragrant.
