Wash the king oyster mushrooms and carrots and cut them into hob pieces; set aside the onion, ginger and garlic;

Saute onion, ginger and garlic under hot oil until fragrant;

Add king oyster mushrooms and stir-fry for 5-10 minutes to release the water;

Add carrots and stir-fry;

Heat another pot of cold oil, add peanuts and stir-fry over low heat until they bloom;

Add various seasonings and stir-fry evenly, cover and simmer over low heat;

Drain the peanuts and set aside;

Simmer until carrots are soft and glutinous and add peanuts;

Before serving, add garlic sprouts and stir-fry evenly;
