Chop lotus root and cowpea finely.

Remove the shrimp strings from the shrimps, add minced ginger and mince them finely.

Place lotus root, cowpea, shrimp, scallions and minced meat in a large bowl, add salt, cooking wine, light soy sauce and oyster sauce.

Mixed shrimp meat filling.

Peel and remove the flesh from the winter melon, and use a baller to scoop out a semicircle.

Put the meat filling into the hollowed out part of the winter melon.

Place the winter melon on a plate.

Put it in a pot and steam it for 15 minutes after the water boils. Mix starch with salt, light soy sauce and water to make water starch. Pour the steamed soup from the plate into the wok and pour in water starch to thicken the gravy.
