Put the ribs into the pot with cold water, add the ginger slices, green onion segments and cooking wine to blanch the water, then remove and drain.

Add vegetable oil to the pot, add rock sugar and fry over low heat until caramel color.

Add the pork ribs and stir-fry until browned. Add the ginger slices, star anise and bay leaves and stir-fry until fragrant.

Add light soy sauce, dark soy sauce and oyster sauce and stir-fry evenly. Add an appropriate amount of water and bring to a boil, then reduce to low heat and simmer for 50 minutes. After the juice is reduced, sprinkle with cooked white sesame seeds.
